We proudly serve Don Bocarte anchovies from Santoña, Cantabria, on Spain's rugged Bay of Biscay. Prepared using traditional methods passed down through generations, each anchovy is patiently salt-cured for months, hand-filleted, and packed in extra virgin olive oil. This meticulous process develops an anchovy of remarkable elegance—deeply savory, naturally rich in umami, and meltingly tender.
