SERVING GUIDE

 

HAMACHI SASHIMI 中鰤魚刺身

This prized fish can be eaten on its own or with the condiments provided.  The black bean sauce is very pungent and a little goes a long way.  The chili oil and the scallion oil can be drizzled on top of the sliced fish.  

 

STEAMED WILD BLACK COD 蒸黑鱈魚柳

Bring a pot of water to a full boil.  Place and submerge the sealed bag of cod in the pot, turn down the flame and let the water simmer for 5 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve with the sweet soy sauce.  

 

POACHED SONOMA CHICKEN 秘制香妃雞 

Bring a pot of water to a full boil.  Place and submerge the sealed bag of chicken in the pot, turn down the flame and let the water simmer for 7 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve with the ginger garlic scallion sauce. 

 

BRAISED PORK SHOULDER 花膠扣豬肩

Bring a pot of water to a full boil.  Place and submerge the sealed bag of braise in the pot, turn down the flame and let the water simmer for 7 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve over steamed rice.

 

WOK TOSSED SKIRT STEAK 鑊燒牛排 

Bring a pot of water to a full boil.  Place and submerge the sealed bag of steak in the pot, turn down the flame and let the water simmer for 5 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve over steamed rice.

 

DUNGENESS CRAB FRIED RICE 大蟹炒飯 

Bring a pot of water to a full boil.  Place and submerge the sealed bag of fried rice in the pot, turn down the flame and let the water simmer for 7 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve over steamed rice.


JASMINE RICE 白飯 Bring a pot of water to a full boil.  Place and submerge the sealed bag of rice in the pot, turn down the flame and let the water simmer for 6 minutes.  Carefully pick up the bag with tongs.  Cut open the bag and serve.
